Green Beans Almondine

Ingredients

  • 5 slices (5 oz) bacon, diced
  • 2/3 cup sliced almonds
  • 1 1/2 lbs green beans, ends trimmed
  • 1 cup water
  • 2 tsp olive oil
  • 2 tsp minced garlic
  • Salt and black pepper
  • 1 Tbsp fresh lemon juice
  • 1/4 cup grated parmesan cheese

Instructions

  • Add bacon to a skillet and heat over medium heat. Cook, while separating pieces, until they are just starting to brown on edges, about 5 minutes.
  • Add almonds and cook and toss occasionally until golden brown and bacon has browned, about 4 minutes. Transfer to a bowl along with any bacon drippings in the pan.
  • Return pan to stove. Add water and bring to a simmer.
  • Add green beans then cover and cook until green beans are nearly tender, about 6 6 to 9 minutes. Drain water.
  • Add olive oil and garlic, season with salt and pepper to taste and saute 1 to 2 minutes. Toss in lemon juice and remove from heat.
  • Using tongs layer half the green beans in a row over a serving platter. Top with half the parmesan cheese then half the bacon and almond mixture.
  • Repeat layering with green beans, parmesan and almond mixture. Serve warm.
