Mango Salsa

Ingredients

  • 2 cups peeled and diced mangoes, (about 2 small)
  • 3/4 cup chopped red bell pepper
  • 1 medium avocado, diced
  • 1/3 cup chopped red onions, rinsed in a sieve to remove harsh bite
  • 1/4 cup chopped fresh cilantro
  • 3 Tbsp fresh lime juice
  • 1 jalapeno, seeded and diced
  • Salt, to taste

Instructions

  • In a medium mixing bowl toss together all ingredients.
  • Season with salt to taste. Serve shortly after preparing (as the avocado will start to brown).

Notes

  • *Use nicely ripened but not mushy mangos.
  • You can make a day or two in advance (store in fridge), just wait to add the avocado until you are ready to serve so it doesn’t brown.
  • Serve with tortilla chips , over coconut rice , poultry or seafood, or serve over tacos, tostadas etc.
