Sheet Pan Gnocchi with Sausage and Broccoli
Ingredients
- 16 oz. shelf stable potato gnocchi or refrigerated gnocchi
- 1 lb. broccoli heads, cut into bite size pieces, large stem reserved for another use
- 3 Tbsp olive oil
- 1 Tbsp minced garlic (3 cloves)
- Salt and black pepper, to taste
- 1 lb. hot or mild Italian sausage
- 1//3 cup fine grated parmesan cheese
Instructions
- Heat oven to 425 degrees. Spray a rimmed 18 by 13-inch baking sheet with non-stick cooking spray.
- Place gnocchi and broccoli on baking sheet. Sprinkle with garlic, and season with salt and pepper. Drizzle evenly with olive oil and toss to coat. Spread mixture out even.
- Break off 1-inch pieces of sausage and dot over gnocchi and broccoli.
- Bake in preheated oven until sausage is cooked through and broccoli is slighty browned, about 20 minutes.
- Remove from oven and sprinkle with parmesan cheese.
