This Skillet Chocolate Chip Cookie takes the beloved buttery, chewy, chocolate chip-studded cookie and amps it up by baking in a cast iron skillet for those perfect crisp edges around a soft-set center. This tempting treat is exceptionally delicious, especially when it’s served warm with a scoop of slightly molten vanilla ice cream atop.

Cold days call for a hot from the oven, skillet baked chocolate chip cookie, don’t you think?

Perhaps I’m just looking for an excuse to make more cookies, but really this is most definitely a cookie worth trying.

This is one of those desserts you’ll want to make on repeat! It’s a super easy, one bowl recipe.

It has the perfect amount of sweet, buttery, molten chocolate goodness and the texture is spot on what a skillet chocolate chip cookie should be. It’s like a traditional chewy cookie, not a soft cake. Which is how some skillet cookie recipes can seem, too puffy and airy.

An ideal cookie should have a great flavor and texture, plus should be visually enticing too. This one checks all the boxes.

  • All-purpose flour: A necessary ingredient for the structure of the cookie.
  • Baking soda: This is a leavening agent that helps the cookie rise.
  • Salt: Added to balance the sweetness of the cookie and enhance the other flavors.
  • Butter: Unsalted butter is called for in this recipe but salted will work fine as well. Just reduce salt to 1/8 tsp if using salted.
  • Granulated sugar: Added to sweeten the cookie and helps create a crisp exterior.
  • Brown sugar: This additional sugar adds a little moisture, a caramel-like flavor, and helps create a chewy texture.
  • Egg and egg yolk: These bind the ingredients of the skillet cookie dough together.
  • Vanilla extract: Added for that sweet background flavor we crave.
  • Chocolate chips: Semi-sweet chocolate chips are what is called for, but you can use any variety. Bittersweet or milk chocolate work fine too depending on the depth you prefer.

Prepare oven and skillet: Preheat oven to 350 degrees. Brush a 12-inch cast iron skillet inside (on bottom and about halfway up the sides) with 1 Tbsp of the butter.

Blend butter and sugars: In a large mixing bowl using a wooden spoon stir together remaining 11 Tbsp butter with brown sugar, granulated sugar, and salt.

Add liquids: Add egg, egg yolk and vanilla and stir until combined.

Stir in dry ingredients: Pour in flour and evenly sprinkle over baking soda, then stir until combined.

Mix in chocolate chips.

Spread dough in skillet: Scoop dough out into prepared pan and spread into an even layer.

Bake: Bake in preheated oven until cook appears slightly under-baked in center, it will continue to cook from the residual heat of the pan for a few minutes once removed from the oven, about 18 to 20 minutes.

Serve: Spoon out and serve warm with vanilla ice cream if desired, or let cool at least 30 minutes to cut into slices.

Helpful Tips

Use a kitchen scale: If possible a kitchen scale works best when measuring for baking for the most accuracy.

Don’t over mix dough: Be careful not to over-mix the ingredients for a more tender cookie that isn’t tough.

Under-bake the cookie: Be sure to remove the skillet cookie from the oven a little early. It will look puffed and slightly under-baked in the center. The residual heat of cast iron will keep it “cooking” even once removed from the oven, and it will deflate upon cooling.

Cool slightly for cleaner cuts: If you want to cut into cleaner wedges the cookie must cool first before slicing. Otherwise it can be spooned out and served somewhat molten.

Possible Variations

Gluten free skillet chocolate chip cookie: To make the cookie gluten free simply replace all-purpose flour with a 1:1 gluten free flour blend such as King Arthur Gluten Free Measure for Measure Flour. Ensure other packaged ingredients are packaged in gluten free facilities.

Browned butter: Browned butter will work great in this recipe, just use 12 Tbsp when browning, and 1 Tbsp non-browned butter to grease the skillet.

Other mix-ins: In this recipe you can also include chopped nuts such as pecans, walnuts or macadamia nuts. Another option is dried fruit such as cranberries or cherries, or try adding white chocolate chips.
